A delicious treat for the end of the week!

Rose’s Chocolate Meringue Pie

Chocolate Filling:
2 cups half-n-half
1 cup granulated sugar
1/4 cup cornstarch
1/8 teaspoon salt
1-1/2 tablespoons Hershey’s Unsweetened Cocoa
3 egg yolks (beaten) [save the whites for meringue]
2 teaspoons vanilla
2 tablespoons butter
1 deep dish pie crust, baked according to directions

Instructions:

  1. Heat 1-1/2 cups of the half-n-half, but don’t let it boil.
  2. While heating half-n-half to a near simmer, mix together dry ingredients: cocoa, cornstarch and salt in a separate bowl.
  3. Separate yolks from whites. Set aside whites in large metal or glass bowl to get to room temperature for making the meringue later.
  4. Whisk the remaining 1/2 cup of half-n-half with the egg yolks. Whisk the mixed dry ingredients into the egg yolk and half-n-half mixture until smooth. Remove half-n-half from heat and gradually whisk into chocolate/yolk mixture.
  5. Once everything is incorporated, place back on heat on medium-high and continue to whisk (so as not to burn the bottom) until the mixture boils. Remove from heat, add butter and vanilla and whisk. Cover with plastic wrap while cooling and make meringue.

 

Meringue:
3 egg whites
½ teaspoon cream of tartar
4 tablespoons powdered sugar
½ teaspoon vanilla

Instructions:

  1. Beat egg whites until frothy. Add cream of tartar and continue beating until soft peaks form. Beat in powdered sugar until stiff peaks form. Add vanilla.
  2. Pour chocolate mixture into cool pie crust. Spread meringue over chocolate filling, covering crust edge. Use spoon to create peaks.
  3. Bake at 325° in preheated oven for 10-15 minutes, until peaks are browned. Cool for one hour, then refrigerate until serving.

Tropical Libations from Uncle Louie’s Booze Bible from The Tiki Goddess Series!

Great Balls of Fire
Dedicated to the memory of Harold Otanami, aka The Smoke Monster, who ended up facedown in the luau pit.
Hot and smooth, one sip will forever immortalize this longtime neighbor of The Tiki Goddess Bar and call to mind those tropic nights when Harold sang his favorite Karaoke number, “Feel Like A Woman.”
Ingredients:
1 oz. Light Rum
1/2 oz. Dark Rum
1/4 oz. Triple Sec
Dash of ginger
2 Drops Tabasco
Shake all together with ice. Strain into a martini glass. Preferably a clean one.
 
Huli Huli Boolie
 
Huli means “To turn.” This one will keep your head spinning. Uncle Louie really gets the tourists rockin’ with this one.
Ingredients:
1 oz. Rum
1 oz. Vodka
1/2 oz. Bourbon
2 oz. Sweet and Sour
3 oz. Passion Fruit or ½ papaya
Blend all with ice. Pour into a tall glass, garnish with a pineapple slice and a cherry.

Santa Paws needs treats, too!

Today’s recipe is courtesy of Caro Lamont, former psychologist turned pet therapist, from The Pampered Pets Mysteries Series!

Caro’s PAWS Good Dog Treats

Ingredients:
1/ 2 cup of creamy unsalted peanut butter
1 cup oat flour
1 cup brown rice flour (Caro uses organic)
1 egg
1 tablespoon of honey
1/ 2 cup finely grated carrot (Dogbert loves carrots and so does Abbey)

  1. Preheat your oven to 350 ° F.
  2. In a big bowl, combine all the ingredients with just enough water to make it the consistency of cookie dough. Optional: You can also add cooked bacon, a bit of grated cheese, or other ingredients for flavor, but don’t add too much or it will mess with the consistency of the dough, and cause your treats to fall apart.
  3. Once you’ve got your treat dough all stirred up, put it between pieces of parchment paper and roll it out to about ¼ inch thickness. Then cut the dough with a cookie cutter. You can use whatever shape strikes your fancy. Caro often uses dog bone shapes of different sizes.
  4. Next, put them on a regular cookie sheet and bake them between fifteen and twenty minutes or until they’re Golden Retriever brown. Let them cool and then put them in an airtight container.
  5. You can store your PAWS Good Dog treats for about a week (or you can freeze them for later use) but keep an eye on them.

There are no preservatives, so watch out for spoilage.
This makes a couple of dozen treats so there’s plenty to go around.

Our first recipe is courtesy of  Bubba Rice, owner and head chef of Bubba Rice Lunch and Catering Diner, from The Mossy Creek Hometown Series.

Roasted Asparagus with Red Pepper & Scallions

Serves 4

Ingredients:
1 bundle of fresh asparagus
1 bundle of fresh scallions or green onions
1/2 cup of diced red bell pepper
3 tbsp extra virgin olive oil
Salt & pepper to taste

  1. Trim the asparagus and the scallions and dice the red pepper.
  2. Place the asparagus spears in a baking dish. Add the scallions on top of the asparagus, then sprinkle the diced red pepper evenly over the top.
  3. Drizzle the olive oil evenly over the dish. Add salt and pepper and place in a 375 degree oven for 15—20 minutes.

Enjoy!

Inspiration is everywhere. As writers, we are always looking for ways to be stirred to greatness. Inspiration drives action…or in some cases, words on the blank page.

When we’re on deadline, we don’t get to wait for inspiration to hit, Raiders of the Lost Bark - Inspire blogwe have to sit down and do the work. But that doesn’t mean we stop looking for ways to add joy or meaning to our lives and our stories.

We’re moved by great books and entertaining movies. An oceanside photo and a road trip with our closest girl friends. A great conversation and other people’s success stories. The way we live our lives often provides our greatest inspiration: a positive attitude and a large dose of laughter.

The setting for our latest release, Raiders of the Lost Bark, was inspired by an Orange County camping trip that Anita and her Bees Snakes and Mountain Lions!family took a number of years ago. For three hot summer days, at the beginning of what was to become a five year drought for California, Anita’s family pitched their well-used six-person tent at the desolate Ronald W. Caspers Wilderness Park campground. Bees, rattlesnakes, and mountain lions. What were they thinking? After two restless nights of sleeping on the hard, dusty ground, and watching over their shoulders for mountain lions, they broke camp and headed east—to the even hotter Las Vegas desert, a cold hotel room and running water.

Years later, we tossed around the idea of a story set outside of Raiders of the Lost Bark - glamping (2)Laguna Beach. What if our pampered characters were stuck between the sandstone canyons and parched wilderness campsites? How would they cope? What luxuries would they take with them? Would they still be able to catch a killer under the stars?

As you can see, sometimes inspiration is so close we just have to take a moment and stop; be mindful in that instant by listening to the silence, and taking a few deep cleansing breaths. We’re not all inspired by the same things or in the same ways. So what inspires you?

We recently had an opportunity to chat with some readers about family traditions. Our biggest take-away from those conversations was, it’s all about attitude. So many talked about how, though they love family traditions, things were going to be different this year. For some, they’d become empty-nesters, for others they’d lost someone dear, and for still others, there were new additions to their families.

We’ve both had our share of life changes this past year and the stories these readers shared reminded us that whether a happy change or a sad one, change requires adjustments. And the main thing you have to adjust is your attitude.

There is joy in remembering times past and in making new memories.

There is joy in carrying on traditions, but perhaps adapting them to include new family members.

There is joy in beginning new traditions—maybe enjoying a quiet dinner, catching a movie, or taking a drive to see the holiday lights.

Or maybe your quiet get-together has become a rollicking feast with new little ones, or new in-laws, or outlaws. There can be joy in that change too.

As 2015 comes to a close and we reflect on all the changes (both good and bad) we’ve experienced this year, we hope to remember the stories that were shared.

And we hope we remember to find the joy.

There’s a dog hair in my wine glass, and I couldn’t be happier.

You might suspect that my joy is inspired by my choice of libation. That’s a reasonable assumption, but in my dog-centric life, it is in fact the floating bit of fur that delights me. I pluck it from my glass and nonchalantly swipe it on my jeans. There, the tiny hair joins countless other reminders of my newest family member.

Piper is my fourth service dog. He follows in the remarkable paw piper faceprints of Slugger, Kenda, and Pato. The handsome black Labrador helps me deal with the challenges of congenital cerebral palsy, and he does so with style – a style I call ‘Pi-perfect’. Although our partnership is just beginning, ‘Pi-perfect’ is my favorite word these days. For good reason.

piper bagWhether he is retrieving the telephone, steadying my steps, or alerting my husband when I need help, Piper’s enthusiasm is boundless.  As a professionally trained service dog, he knows more than fifty different commands. Everything from hold, to get it, to tug, to bump.  Piper even knows the word refrigerator!  Yes, my smart Lab will go to the fridge, open it, grab my lunch bag, close the fridge, and bring me my food.Leigh snuggle

I keep my lunch bag securely closed of course, but to be honest, I do find the occasional dog hair on my lunch plate … and I couldn’t be happier.

Dear readers, I would like to begin by thanking everyone who has purchased my book, The Dog Walker.  I sincerely appreciate your patronage.  I would also like to thank Bell Bridge for the opportunity to contribute to their blog.  In keeping with my themes which tend to revolve around the needs of homeless animals, I would like to mention that we are fast approaching winter and with this season some homeless animals struggle merely to survive.  I am drawing particular attention here to the needs of feral cats.  Interestingly, I was not a cat lover until several years ago when my friend told me the story of a feral cat in her neighborhood whom she had named Papi kitty or Pop for short.  It seems that her feral cat – that is now around twelve years old – at one time had a wife and two kids.  Over the years his entire family died, either they froze to death or were run over or got sick.  The only one who survived was Pop.

When I heard his story I immediately went into action and began feeding him in the sewer where he lives (when he is done eating I retrieve the empties so it doesn’t clog the sewer).  I have been doing this now for about three years.  When it snows I make sure that I shovel out the sewer opening facing the road so it is clear for him to go in and out.  Needless to say, Pop has won my heart and we have established an understanding with each other and he knows I’m his friend.  I love all cats now as never before, in large corwyn catpart because of Pop.  So if this winter you see any feral cats in your neighborhood I would ask that you please show them some kindness and help them out if you are able.  They are beautiful animals and it breaks my heart to see them roaming the streets, especially when it is cold and the weather is harsh.  Anything that you can do for them, whether as elaborate as having them spayed and neutered, or providing them a warm shelter, or providing them with some dry or wet food would be a great blessing for them.  They depend on our kind actions to survive, no matter how great or how small.  I have attached a photograph of Pop for those of you who might be interested.  A photo of Pop is also posted on my Amazon page.  I wish each and every one of you and everyone at Bell Bridge a safe and joyful holiday season.

  1. Never tell full humans about the demon part of you—unless you want to be treated like a monster.
  1. Find the closest Demon Underground to meet other demons. They’ll understand what you’re going through and help keep you sane.
  1. Don’t use your powers too much or they’ll become addictive. Unless you want to go around hoovering up lustful energy from every guy you meet. And don’t let men get too close—they can’t control their urges around you.
  1. On the other hand, don’t suppress your demon side too much or it could burst free at the worst possible time, like when you’re with a guy you really, really want to impress.
  1. Find a healthy, safe way to express your lust . . . like slaying vampires.
  1. Remember, not all vampires are evil. Some are even rather sexy. Slay the bad ones. Leave the members of the New Blood Movement alone.
  1. Don’t date full humans. They don’t understand your need for sucking up lustful energy and it’s too easy to drain them by accident. It’s not a good idea to leave mindless husks in your wake.
  1. Never forget that while you can force men to do whatever you want, women are immune to your powers. Well, your lustful ones anyway. You can still use your strength and speed against them. Unless they’re female vampires. Then use male vampires against them.
  1. Don’t cash your V-card too early—unless you want to lose your powers.
  1. Find a hellhound to partner with. They can be a pain, but they’re great at watching your back and providing a furry shoulder to cuddle with when you need it.

A brief episode in the British family history of Lady Toria Cash, the feline fatale of Downton Tabby

“Can you believe that alley cat?” Lady Meow Grandcatham lifted her whiskers in distain. “Thinking I’d simply fall under the spell of his gorgeous green eyes.”

I shook my head. “He does seem rather cheeky.” I’m Annakatrina, Lady’s Meow’s lady’s maid, and the alley cat she was referring to was Alexander Kittingham who’d apparently made a play for Lady Meow in a big way.

I carefully folded the lace frill she’d worn to dinner and reached for mr mrs catthe brush I used every night on her silky black fur. Though I would never bring it up to Lady Meow, talk below stairs was that Alexander Kittingham was not actually a purebred British shorthair. He was often referred to as “Alley” in a disparaging tone, by Thomas Cat, Lord Grandcatham’s valet. Alexander was quite a handsome fellow and a favorite of the ladies around the dinner bowl.

He was nice looking with dark brown fur and deep green eyes, but I was not impressed. You see I’m madly in love with Mr. Bait. Poor Mr. Bait is currently locked up in the pound, but I had no doubt he would be freed.

“Beyond cheeky, I’d say.” Lady Meow lifted her paw to her neck. “Would you help me get out of this collar?”

I pulled on the diamond collar with my teeth and it snapped off easily. Carefully placing it in the ornate trinket box, I picked up the brush again.

cat pic hatSuddenly, there was a scratch at the door and I moved quickly to open it.  Lady Vi, Meow’s grandmother, stepped into the room. She was a formidable feline and referred to as the Dogwagger Countess because even the dogs at the neighboring estates were afraid of her. I don’t believe she’d ever actually bitten anyone canine or otherwise, but all it took was a hiss and the very slight unsheathing of her claws and it was clear she meant business.

“Grandmother.” Lady Meow purred. “What a surprise.”

“Not an unpleasant one, I hope.” The older feline stepped closer so Lady Meow could bump noses with her.

“I’ll leave you.” I moved quietly on soft paws toward the door.

“No, please stay.” The Dogwagger waved her tail in my direction. “I know Meow trusts you.”

“What is it, Grandmama?” Lady Meow dropped on her haunches. “Is something wrong?”

“What is wrong is my sources tell me someone is publishing a catty tell all tome about the Britain’s aristocats. I am told there’s a whole chapter devoted to the Grandcatham Family.” She leaned on the edge of Lady’s Meow’s bed and smoothed her fur.

Lady Meow began to pace. “Have you told Pappa’?

The Dogwagger shook her head. “No, nor your mother. It will be up to us to sort this out.” She gave a deep sigh and tipped her head to look at me. “We must find out who this low-life is and stop him or her before our good name is dragged through the litter box.” Sharp blue eyes pinned me in place.

“What can I do to help, M ‘lady?”

“My dear, you must be our eyes and ears.” The Dogwagger put her paws together as if it were all settled. “You can go places we must not and you will never be noticed.”

I had the thought that not being noticed was hardly complimentary, but knew she was right.

“You will help us, won’t you, Anna?” Lady Meow crossed the room in a single smooth leap to stand in front of me. Her golden eyes searched my face.

“Of course, I will.” I bowed my head.

And thus began my new career as Annakatrina, Cat Sleuth.

These are our two Westies.  That’s Freddy on the left and Billy on the right.  They’re both ten.  V1.60We’ve had Freddy for nine years and Billy for only six.  For the first four years of Billy’s life, he belonged to a dog breeder.  When the breeder didn’t want him any more the guy just took him to an animal shelter.  When Billy first came to us, he didn’t even know how to walk on a leash or have the strength to jump from the porch into the house.  In fact, he didn’t seem to know anything about how to be a house pet… probably because he’d been locked up in a cage for most of his life.  But as soon as he met Freddy, he became a dog prodigy, learning so fast it was amazing.  It was apparent that he was learning it all from Freddy.  But how?  I never saw them having any kind of dog conversation.  I’ve often wondered how this transfer of information took place.  Here’s a conversation I can imagine them having:

 

FREDDY: “Hi kid.  Where you from?”

 

BILLY: “I don’t really know.  Not from anywhere close, because we were in the car a long time when they picked me up to bring me here.”

 

FREDDY:  “You should be aware of a few things… First of all, do not pee or do the other thing anywhere in the house.  Nothing will get you in bigger trouble than that.  I did it once and well, I don’t even want to think about it.”

 

BILLY:  “Did they hit you?”

 

FREDDY: “They’d never hit us or hurt us in any other way.  But the shouting… you don’t want to hear that.  If you’d like to go outside, just find them and stare at them.  They’ll figure it out.”

 

BILLY:  “What if I’m hungry?”

 

FREDDY:  “The stare works for that, too.  They’ll lead you into the kitchen to see if you want to go out.  The food bowls are in there.  Just start licking the empty bowl.  That usually works.

 

“Once you settle in, you’ll want to sit in their lap and get your belly scratched.  The smaller one with the soft hands does it the best, but the other one, is pretty good, too. “

 

BILLY: “How do I get them to pick me up?”

 

FREDDY:  “The absolute best way is too sit up with your paws in the air side by side and start pumping them up and down, like you’re running in the air.  They cannot resist that one.”

 

BILLY:  “I saw a big basket of toys in that other room. Are those all yours?”

 

FREDDY:  “They were… but you can play with them too.”

 

BILLY:  “Thanks. I thought you might be… upset to have me around.”

 

“FREDDY:  “Humans are great, but they have almost no sense of smell and can hardly hear anything.  I just don’t get that.  So… you can help me protect the place, you know… bark like crazy when anything seems odd.

 

BILLY: “I can definitely do that.  What’s the best part of living here?”

 

FREDDY:  “The best part…? No question… it’s the love.

 

A final note from the humans about the toys:  After about a year, the two dogs seemed to reach an agreement that all of the toys now belonged to Billy.  We didn’t hear that conversation either.”

 

 Don is a retired professor of Anatomy and Neurobiology.  His entire academic career was spent at the University of Tennessee Health Science Center, where he published dozens of papers on wound healing and taught microscopic anatomy to over 5,000 medical and dental students.  He is also the author of seven published forensic mysteries and five medical thrillers. Caro’s PAWS Good Dog Treats

Today is Dog Biscuit Day and we would like to give you a recipe so that you can make delicious dog treats for your furry friends! Just follow this easy recipe and you’ll have your pooches happy for days! 🙂

Ingredients:

1/2 Cup Creamy, Unsalted Peanut Butter

1 Cup Oat Flour

1 Cup Brown Rice Flour (Caro uses organic)

1 Egg

1 Tablespoon of Honey

1/2 Cup Finely Grated Carrot

(Dogbert loves carrots and so does Abbey!)

 

Directions:

Preheat oven to 350°

Once you’ve got your treats dough all stirred up, put it between pieces of parchment paper and roll it out to about 1/4 inch thickness. Then cut the dough with a cookie cutter.

Next, put them on a regular cookie sheet and bake them between fifteen and twenty minutes or until they’re golden retriever brown.

Let them cool and then put them in an airtight container. You can store your PAWS Good Dog Treats for about a week (or you can freeze them for later use) but keep an eye on them. There are no preservatives.

We love mysteries that feature animals. Dogs, cats, parrots, ducks…okay, we’ve never actually read a mystery featuring a duck but if there’s one out there that you’ve read, please let us know. We figured there might be more people out there like us – well, not exactly like us – but people who also love mysteries featuring animals. That’s how we ended up writing the Pampered Pets mystery series for Bell Bridge Books – we wrote the kind of stories we like to read.

Our pets comfort us, entertain us, lift our spirits and ask nothing in return. Those furry, feathered, or otherwise adorned creatures make our lives fuller just by being a part of it, don’t they? They do their part and it’s important we do ours.

Alert: We’re about to climb on our soapbox.

If you’re planning to adopt a pet, please consider saving a life by adopting a pet from a local animal shelter. There are many wonderful pets who are looking for their forever homes. If you need help locating a shelter in your area try, this handy finder from Adopt-a-Pet. All you have to do is put your zip code in and it brings up a listing of shelters near you.

And if you’re able, consider a tax-free donation to organizations that help take care of abused or neglected animals like your local shelter. These organizations are always in need of funds and some may also take donations of newspapers, blankets, and other items.  Also, most local shelters are vastly under-staffed and appreciate the assistance of helpful volunteers.

Finally, many strays who end up in shelters are lost pets who did not have identification or the result of unwanted litters. Be a responsible pet owner, make sure your pet has proper ID and please, please get your pets spayed and neutered.

Our pets give us a lot of love – it’s the least we can do for them.
